Prarie chicken^

Measure Ingredient
1 \N Young prarie chicken
\N \N Salt and pepper to taste
2 tablespoons Lard
2 tablespoons Flour

Wash, cut up and dry bird; season. Have fat in frying pan very hot.

Lay the chicken in and fry brown on both sides until tender. If the chicken is old, stew gently till tender and fry as above. Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
