Potato flour mayonnaise for those with allergies.

Yield: 6 servings

Measure Ingredient
1½ tablespoon Potato flour
¼ teaspoon Dry mustard
½ teaspoon Salt
2 teaspoons Sugar
¼ cup Cold water
¾ cup Boiling water
2 tablespoons Lemon juice
1 tablespoon White vinegar
½ cup Vegetable oil
\N \N Salt and pepper

Mix the dry ingredients in saucepan, then stir in the cold water, mixing well. Add boiling water and cook until the mixture is just clear. Cool to lukewarm, then gradually add remaining ingredients, beating constantly.
