Potato babka

Yield: 8 servings

Measure Ingredient
2 \N Eggs, separated
2 cups Mashed potatoes, hot
⅓ cup Hot cream or milk
⅓ cup Cottage cheese
1 tablespoon Butter
\N \N Salt

From "Traditional Ukrainian Cookery" by Savella Stechishin.

Beat egg yolks into potatoes. Add remaining ingredients, except egg whites. Beat vigorously until light. Beat egg whites until stiff and fold into mix. Spoon potatoes lightly into a buttered baking dish.

Bake 15 minutes at 400'F. or until well puffed.
