Potato apple salad

Ingredients

| 1 | pounds | Small Red Potatoes; cubed |
| 1 | Apple; peeled cored and cubed | |
| 1 | Stalk Celery; diced | |
| 2 | Green Onions; coarsely chopped | |
| ⅓ | cup | Walnuts; toasted and chopped |
| ⅔ | cup | Sour Cream |
| 3 | teaspoons | Raspberry Vinegar |

Directions
Boil potato cubes in lightly salted water until just tender, 15 to 25 minutes; drain and cool. Combine potatoes, apple, celery, onions and walnuts. Plump raisins in boiling water for 3 seconds; drain and add.
Combine sour cream and raspberry vinegar and a small amount of salt and pepper. Dress potato mixture with this; chill. Taste for seasonings.
