Pork chop supreme

Ingredients

| 4 | Lean pork chops; 1-inch thick | |
| 4 | slices | Onion; thin |
| ¼ | cup | Uncooked rice (not instant rice!) |
| 1 | can | (19-oz) whole tomatoes (up to) |
| 1 | teaspoon | Salt |
| Pepper to taste | ||
Directions
Trim off excess fat. Season chops. Brown in lightly greased skillet. Top each chop with slice of onion, 1 tablespoon rice & top with a whole tomato.
Add any remaining tomatoes & juice to skillet. Season with salt & pepper.
Cover tightly & simmer in skillet 1-½ hours or put in covered baking dish & bake at 350 for 1-½ hours. Yields 4 servings.
