Poached plums with mascarpone cheese

Quantity Ingredient
400 grams Sugar
450 millilitres Water
900 grams Fresh plums
Mascarpone cheese
Caster sugar to taste

Put the sugar and water into a saucepan and bring to the boil slowly. Tip in the plums, cover the saucepan and poach until they begin to burst. Turn into a bowl and serve warm with some sweetened mascarpone cheese melting over the top.
