Vanilla poached plums

1 | large | Vanilla bean |
¼ | cup | Sugar OR |
3 | Sacks vanilla sugar | |
2 | cups | Unpeeled, pitted, sliced plums; (about 1#) |
1½ | teaspoon | Lemon juice |
2 | teaspoons | Margarine |
Directions
Cut vanilla bean in half lengthwise, and scrape seeds into a small bowl; discard bean. Add sugar and stir well.
Place plums in a 1-quart baking dish, add sugar mixture and lemon juice, tossing gently to coat. Dot with margarine; cover and bake at 400F for 20 min or until plums are tender, stirring once.
Yield: 4 servings @ 112 calories each.
