Pizza sandwiches

Measure Ingredient
2 tablespoons Oil
½ cup Onion -- chopped
2½ tablespoon Celery -- chopped
2½ tablespoon Green Pepper -- chopped
1 cup Tomatoes, Canned
6 tablespoons Tomato Paste
1½ cup Pizza Sauce
1½ cup Cottage Cheese, Lowfat
1 teaspoon Oregano
⅛ teaspoon Sweet Basil
¾ teaspoon Salt
⅛ teaspoon Pepper
¼ teaspoon Rosemary -- optional
6 \N English Muffins -- toasted
4 tablespoons Parmesan Cheese -- grated



SAUCE: Saute onion, celery and pepper in vegetable oil until tender and translucent. Add tomatoes, tomato paste and seasonings. Cook over low heat on stove top for approx. 30 mins, stirring occasionally.

Yield: approx. 1½ cups sauce.

SANDWICHES: Mix 2 Tbs cottage cheese with 2 Tbs sauce. Spread mixture on ½ toasted English muffin. Sprinkle 1 tsp parmesan cheese over top. Broil in oven for approx. 5 mins or until parmesan cheese starts to turn golden.
