Pineapple sweet potatoes (rice)

Measure Ingredient
18 ounces Cans vacuum-packed sweet potatoes
½ teaspoon Salt teaspoon
⅛ teaspoon Nutmeg Dash pepper
16 ounces Crushed pineapple in its own juice, drained
2 tablespoons Sliced almonds Nutmeg

Crushed pineapple in its own juice takes the place of brown sugar in this guilt-free version of the traditionally mega-calorie side dish.

MiCROWAVE DiRECTiONS: in large bowl, mash potatoes; stir in remaining ingredients except almonds. Spoon into ungreased 1½-quart microwave-safe casserole; cover. Microwave on HiGH for 5 to 6 minutes or until thoroughly heated, turning dish ¼ turn once during cooking. Just before serving, sprinkle with almonds and nutmeg. 8 (¾-Cup) servings.
