Pineapple muffins

Yield: 12 servings

Measure Ingredient
1 cup Unbleached flour
2 teaspoons Baking powder
¼ teaspoon Salt
½ teaspoon Cinnamon
¾ cup Rolled oats
⅓ cup Brown sugar -- packed
1 Egg white -- whipped
½ cup Applesauce -- at room
Temperature
1 cup Pineapple -- crushed/undrain

Preheat oven at 350. Prepare muffin tins with cooking spray and flour. In a mixing bowl, combine flour, baking powder, salt, cinnamon, oats, and sugar. In another mixing bowl, combine egg white, applesauce, and pineapple. Add dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill muffin tins two thirds full. Bake 20 to 25 minutes.
