Pineapple ambrosia

Yield: 10 Servings

Measure Ingredient
3 cups Miniature marshmallows
1 can (20-oz) crushed pineapple (in own juice); drained
1 can (20-oz) pineapple chunks in juice; or tidbits, drained
1 can (11-oz) water-packed mandarin oranges; drained
1 cup Fat-free plain or tropical-flavored yogurt
½ cup Flaked coconut

In a large bowl, gently combine the marshmellows, crushed pineapple, pineapple chunks or tidbits, oranges, yogurt and coconut. Cover and chill in the refrigerator for at least one hour. Makes 10 side-dish servings.

If you like, you can also serve this as a light dessert.
