Yield: 1 Servings
Measure | Ingredient |
---|---|
2 \N | Teal killed at Pin oak (or at least in Arkansas) |
\N \N | Pepper |
\N \N | Sauerkraut (fresh bulk style in jar or plastic bag) |
Sprinkle teal (inside and out) with pepper. Stuff cavity with sauerkraut and then wrap bird in aluminum foil and cook for 10 minutes at 500ø. Turn oven to 300ø and cook for 2-½ hours. Make sure teal is wrapped properly so juice does not leak out. After cooking, turn over so juice goes throughout the bird. Meat should fall off the bone and the kraut is great.
If you use canned sauerkraut, you might as well stuff a coot!! Yield: 2 teal per serving.
