Peta vanilla pudding

Yield: 4 servings

Measure Ingredient
⅓ cup Sugar
3 tablespoons Cornstarch
⅛ teaspoon Salt
2 cups Soy milk
1 teaspoon Vanilla extract

Mix sugar, cornstarch, and salt in a large saucepan. Gradually blend in soy milk stirring constantly to avoid lumps.

Cook the mixture over low heat, stirring constantly, until thickened.

Cook for an additional 2-3 mins, stirring now and then.

Remove pudding from heat and add vanilla. Let cool for 10 mins, stirring occasionally. Pour pudding into large serving dish or individual dishes, and chill until firm, about 2-3 hours.
