Peppery corn bread

Yield: 8 servings

Measure Ingredient
⅓ cup Mashed tofu
⅓ cup Vegetable oil
1 cup Water
1 cup Yellow corn meal
1 cup All-purpose flour
3 tablespoons Nutritional yeast powder
2 teaspoons Baking powder
2 tablespoons Sugar
1 teaspoon Salt
½ teaspoon Black pepper (or more!)

Using electric mixer or food processor, beat tofu with oil and water until smooth.

Mix cornmeal, flour, nutritional yeast, sugar, baking powder, salt and pepper in a bowl, then add to tofu mixture. Mix well to combine. Pour batter into a greased 8" (round or square) casserole dish or baking pan. Bake at 350 F. for about half an hour. Cut into wedges or squares and serve hot.
