Pepper steaks - gas grill

Yield: 6 servings

Measure Ingredient
\N \N *Hickory chips
¼ cup Butter
2 tablespoons Lemon juice
1 teaspoon Worcestershire Sauce
½ teaspoon Garlic powder
¼ teaspoon Salt
2 tablespoons Cracked pepper
2 pounds Beef sirloin steak 1 1/2 inches thick

*Hickory chips. Soak Hickory chips in water to cover for 1 hour; drain chips and place on a 12 inch square of heavy foil. Wrap foil around chips to make a log leaving both ends open. Pre-heat gas grill on HIGH for 10 minutes. While grill heats, place butter in a saucepan on warming rack to melt. Remove from heat; stir in lemon juice, Worcestershire, garlic powder and salt. Rub pepper into both sides of steak. Place Hickory chip log directly on lava rocks. Turn both burners to MEDIUM-HIGH. Place steak on cooking grid; close hood and cook for 17 to 20 minutes, brushing occasionally with lemon-butter mixture. Turn meat and cook 15 to 17 minutes longer for rare, slightly longer for medium. Heat remaining lemon-butter on warming rack; pass with steak. Submitted By GRANT AMES On 02-03-95
