Pearl barley salad with broccoli

Ingredients

½cupPearl barley
cupWater or stock pinch of salt and pepper
2cupsBroccoli florets, lightly cooked
1Rib celery, finely chopped
1smallCarrot, shredded Vinaigrette (recipe follows)

Directions

Place pearl barley and water in a pot and bring to a boil. Reduce heat to medium and cook for about 45 minutes or until slightly soft.

Rinse under cold water and drain. Blend barley with vegetables. Add vinaigrette to mixture and allow to marinate for 20 minutes before serving. Makes 4 servings.
