|½ cup||Pearl barley|
|1½ cup||Water or stock pinch of salt and pepper|
|2 cups||Broccoli florets, lightly cooked|
|1 \N||Rib celery, finely chopped|
|1 small||Carrot, shredded Vinaigrette (recipe follows)|
Place pearl barley and water in a pot and bring to a boil. Reduce heat to medium and cook for about 45 minutes or until slightly soft.
Rinse under cold water and drain. Blend barley with vegetables. Add vinaigrette to mixture and allow to marinate for 20 minutes before serving. Makes 4 servings.
