Pear corned beef slaw

Ingredients

Cored; diced
6cupsShredded cabbage
1canCorned beef; (12 ounces) cubed
¼cupChopped onion
1cupMayonnaise
1cupCubed Swiss cheese
1tablespoonVinegar
2teaspoonsPrepared mustard
1teaspoonPrepared horseradish
2teaspoonsSugar
2teaspoonsCelery seed
1teaspoonCaraway seed; (optional)

Directions

Toss together pears, cabbage, corned beef, Swiss cheese and onion. Blend mayonnaise with remaining ingredients. Add to salad and toss gently, so that all ingredients are coated evenly. Serve in a lettuce lined bowl.

Garnish with additional red and yellow pear slices and parsley, if desired.

Always be sure to use ripe pears.
