Peanut cookies

Yield: 48 servings

Measure Ingredient
1 cup Shortening
1 cup Sugar
1 cup Packed brown sugar
2 eaches Eggs
1½ cup All-purpose flour
1 teaspoon Baking powder
1 teaspoon Baking soda
3 cups Quick cooking oats
1 cup Peanuts -- salted

In mixing bowl, cream shortening and sugars; beat in eggs. Combine flour, baking powder and baking soda, stir in to creamed mixture. Add the oats and peanuts. Drop by heaping tablespoonfuls onto greased baking sheets. Dip the bottom of a glass in sugar and slightly flatten cookies. Bake at 350 deg. for 7 to 10 minutes. Yield: 4 dozens.
