Pasta marinara on beds of spinach

Yield: 4 Servings

Measure Ingredient
1 Recipe Marinara Sauce
10 ounces Frozen Chopped Spinach
8 ounces Spaghetti
1 dash Freshly Ground Black Pepper
½ Lemon; Juice Only

Prepare marinara sauce. While marinara sauce is simmering cook spinach; drain well. Also cook pasta until al dente; drain well. To serve, place a bed of spinach on each of 4 dinner plates. Sprinkle with pepper and drizzle with lemon juice. Add a layer of pasta. Top with marinara sauce and garnish with parmesan cheese, black peper and sauteed pine nuts. Variations: *stir other steamed vegetables into sauce *substitute hot cooked brown rice for pasta
