Parkay cookie jar recipe

Yield: 60 servings

Measure Ingredient
2½ cup Flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup Parkay soft margarine
1 cup Sugar
1 cup Packed brown sugar
2 eaches Eggs
2 teaspoons Vanilla

Mix flour, baking soda and salt in small bowl. Beat parkay and sugars in large bowl with mixer until fluffy. Beat in eggs and vanilla. Add flour mixture, beat until blend. Stir variation of your choice (see Below). Drop by rounded tablespoon onto ungreased cookie sheets. Bake at 375 for 8 to 10 minutes. Cool 2 minutes. Remove from cookie sheets; cool completely on wire rack.

VARIATIONS:

CRISPY CHOCOLATE CHIP COOKIES: Stir in 2 cups semi-sweet chocolate chips and 1 cup crisp rice cereal.

TRIPLE CHOCOLATE CHIP COOKIES: Stir in 1 cup each semi-sweet chocolate chips, milk chocolate chips and white chocolate chips.

ROCKY ROAD COOKIES: Stir in 1 cup each semi-sweet chocolate chips, chopped pecans, marshmallow creme.

APPLESAUCE OATMEAL COOKIES: Stir in ⅓ cup applesauce and 1½ cups oats.
