Measure | Ingredient |

18 pounds | Lean pork |
6 pounds | Pork fat |
2 ounces | Sage |
1½ cup | Pepper |
½ cup | Salt |
1 tablespoon | Dried crushed red pepper |
1 tablespoon | Sugar |
Have meat ground fine (twice is not too much). Combine all ingredients. Mix well with hands. Shape into patties and fry in skillet.
