Papa's country sausage recipe

Yield: 50 Servings

Measure Ingredient
18 pounds Lean pork
6 pounds Pork fat
2 ounces Sage
1½ cup Pepper
½ cup Salt
1 tablespoon Dried crushed red pepper
1 tablespoon Sugar

Have meat ground fine (twice is not too much). Combine all ingredients. Mix well with hands. Shape into patties and fry in skillet.
