Papa's country sausage recipe

Ingredients

18 | pounds | Lean pork |
6 | pounds | Pork fat |
2 | ounces | Sage |
1½ | cup | Pepper |
½ | cup | Salt |
1 | tablespoon | Dried crushed red pepper |
1 | tablespoon | Sugar |
Directions
Have meat ground fine (twice is not too much). Combine all ingredients. Mix well with hands. Shape into patties and fry in skillet.
