Pacific rim pesto

Yield: 1 cup

Measure Ingredient
3 eaches Garlic cloves, chopped
3 eaches Green chiles, chopped
2 ounces Roasted peanuts, coarsely chopped
1 ounce Mint, coarsely chopped
2 ounces Cilantro, coarsely chopped
½ each Lemon, juiced
Salt

Combine garlic, chiles, peanuts, mint, cilantro, lemon juice & salt in a blender or food processor. Keep the pesto in a clean jar in the refrigerator until needed. Use within a few days or freeze.
