Oriental cabbage slaw

Ingredients

1mediumCucumber; halved lengthwise and thinly, sliced
1cupFresh pea pods;, halved
¼cupRice vinegar
1tablespoonSalad oil
2teaspoonsToasted sesame oil
½teaspoonSugar
teaspoonSalt
½teaspoonRed chili paste; (optional)
4cupsShredded napa cabbage
½cupCoarsely chopped honey-roasted peanuts

Directions

In a large mixing bowl combine cucumber and pea pods. For dressing, in a small mixing bowl stir together vinegar, salad oil, sesame oil, sugar, salt and red chili paste, if desired. Pour over cucumber and pea pods, stirring to coat. Cover and chill for 4 to 24 hours. Just before serving, stir in cabbage and peanuts. Makes 8 side-dish servings.
