Onion torte+

Measure Ingredient
3 \N Large onions, sliced
2½ tablespoon Butter
4 \N Eggs
1 pounds Tofu, drained
1½ teaspoon Salt
1½ teaspoon Dried parsley
¾ teaspoon Cayenne
2½ cup Swiss cheese, grated
\N \N Paprika

I found this recipe in a 1981 book from the Blue Heron cafe in Minneapolis. I don't know if the cafe exists anymore.

Saute onions in butter till golden. Spread over bottom of an 8 x 8" baking pan. Mix tofu and seasonings in a blender (a little at a time if necessary). Pour into mixing bowl and stir in cheese. Spread mixture evenly over onions. Dust with paprika. Bake at 350 degrees for 50 to 60 minutes or until set.
