Old bay turkey cakes

Yield: 4 servings

Measure Ingredient
1 \N Egg; lightly beaten
2 teaspoons Pepper, black
½ cup Bread crumbs, italian
1 pounds Turkey; cooked, minced
\N \N --- Old Bay Spice Co.
\N \N per Earl Shelsby
\N \N modified by Sam Waring
2 tablespoons Mayonnaise
2 teaspoons Old Bay seasoning
2 \N Scallions; finely chopped
3 tablespoons Butter

In a mixing bowl, combine all ingredients except turkey and butter.

After ingredients are thoroughly combined, gently stir in turkey.

Form into 4 or 5 turkey cakes. Saute in butter until lightly browned on both sides.
