Fruit and nut rice salad

| ½ | Green pepper; deseeded and sliced | |

| 50 | grams | Raisins; (2oz) | 
| 50 | grams | Cashew nuts; (2oz) | 
| 15 | grams | Flaked almonds; (1/2) | 
| 4 | tablespoons | Orange juice | 
| 1 | tablespoon | White wine vinegar | 
| 1 | tablespoon | Oil | 
| 1 | pinch | Nutmeg | 
| Salt and freshly ground black pepper | ||
Directions
FOR THE DRESSING
1. Place all the salad ingredients in a bowl and mix well. 
2. In a separate bowl mix all the dressing ingredients together. 
3. Pour the dressing over the salad, mix thoroughly and transfer to a serving dish.
