Nutty wild potato pancakes

Yield: 2 servings

Measure Ingredient
2 cups Uncooked shredded potatoes
1 large Egg; beaten
⅓ cup Chopped nuts
\N \N (e.i walnuts; pinenuts, peanuts,
\N \N Cashews; almonds etc.)
1 tablespoon Minced fresh parsley
1 teaspoon Soy sauce
\N \N Oil; for pan-frying

Combine all ingredients, except oil, in a medium bowl. Form into patties, about ½-inch thick by three inches in diameter. Fry in hot oil until lightly browned and just firm. Serves 2.
