Noodles with spinach and ham^

1 | tablespoon | Finely chopped onion |
1 | tablespoon | Finely chopped onion |
2 | cloves | Garlic, crushed |
3 | tablespoons | Butter, melted |
3 | tablespoons | Flour |
1 | cup | Half and half |
½ | teaspoon | Salt |
½ | teaspoon | Pepper |
⅛ | teaspoon | Ground nutmeg |
½ | cup | Chopped country ham or |
Cooked ham | ||
½ | cup | Soft breadcrumbs |
½ | cup | Grated Parmesan cheese |

Directions
Cook noodles, drain, place in a large bowl and set aside.
Combine spinach and lemon juice; set aside.
Cook onion and garlic in butter until tender. Add flour, stirring until smooth. Add half and half slowly, cook, stirring constantly until thickend and bubbly. Stir in spinach, salt, pepper and nutmeg.
Pour over noodles, add ham and toss well. Place in a lightly greased 13 x 9 x 2" baking dish. combine bread crumbs and cheese; sprinkle over casserole and spray with cooking spray.
Cover casserole and freeze up to 3 minths, if desired, Thaw in refrigerator 24 hours.
Bake covered, at 350F. for 30 minutes; uncover and bake an additional 5 minutes or until thoroughly heated. Makes 6-8 servings.
