Nicely spiced pork loin

Yield: 8 Servings

Measure Ingredient
4 \N Cloves garlic, minced
1 teaspoon Salt
2 tablespoons Vegetable oil
2 tablespoons Lemon juice
1 tablespoon Paprika
2 teaspoons Each ground cumin and coriander
1 teaspoon Ginger
¼ teaspoon Cinnamon
1 \N Boneless pork loin roast
\N \N (about 4 lb.)

In bowl, mash garlic with salt; mix in oil, lemon juice, paprika, cumin, coriander, ginger and cinnamon.

Cut 1 inch deep slits all over top and sides of pork; rub paste all over roast. Roast on roasting rack in pan in 325øF oven for about 1 hour and 45 minutes or until meat thermometer registers 160øF.
