My yummy bran muffins

Ingredients

QuantityIngredient
3cupsAll-Bran cereal
½cupVeg. oil
1cupBoiling water
cupFlour (don't sift, but spoon gently)
1teaspoonSalt
cupSugar (gran. white)
teaspoonBaking soda**
2Eggs, beaten (room temp)
2cupsButtermilk (not low-fat)
1cupRaisins (golden for best flavor)

Directions

Combine 1st 3 ingred. in bowl, set aside.

Combine dry ingreds in bowl. Add eggs & buttermilk, stirring until ingreds are moistened. Add Bran misture and raisins, mix well. Fill greased tins ⅔ full. Bake 400 degrees 15-20 minutes NOTE: these muffins freeze well! Everytime I make them, they disappear before I ever get a chance to freeze any. So I have learned to double the recipe. These are definitely Tried and Loved!! It took me many tries at adjusting the recipe, before I got them just right. I hope you enjoy them.
