Mustard and thyme marinaded riblets

Yield: 4 servings

Measure Ingredient
1 600 gram pac lamb riblets
2 tablespoons Smooth Dijon mustard
2 tablespoons Grainy mustard
1 15 grams pac fresh thyme; finely chopped
6 tablespoons Olive oil

Place the riblets in a non-metallic dish.

Combine all the marinade ingredients in a bowl and pour/brush over. Leave to marinade for 1-2 hours or overnight.

Preheat a grill to a moderate heat and cook for 15-18 minutes. Serve immediately with a salad.
