Mussels in garlic butter

Ingredients

Quantity Ingredient
¾ cup Softened sweet butter
Juice of 1/2 lemon
Grated peel of 1 lemon
cup Minced fresh parsley
4 Crushed garlic cloves
3 tablespoons Minced shallots
White pepper
Nutmeg
4 Dz mussels, well scrubbed,
Steamed & cooled

Directions

Combine butter with lemon juice, lemon peel, parsley, garlic & shallots; season to taste with pepper & nutmeg. Combine butter-herb mixture in food processor fitted with steel blade; process until well blended. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each with some mixture; run under hot broiler 2-3 minutes, watching carefully. Or bake in 425 oven for 10 minutes or until bubbly.
