Yield: 4 Servings

Measure Ingredient
1 tablespoon Flour
½ cup Sugar
\N \N Pinch of salt
1 tablespoon Butter
1 \N Egg, separated
2 cups Milk
1 teaspoon Lemon extract
1 tablespoon Granulated sugar
½ teaspoon Vanilla extract

In a small saucepan, combine flour, ½ cup sugar, salt, butter, egg yolk and milk. Over medium heat, bring to a boil. Add lemon extract.

Set aside to cool slightly. In a small bowl, beat the egg white until stiff. Fold half the egg white into the pudding mixture. To the remaining beaten egg white, add 1 tbsp. sugar and vanilla. Pour pudding into small casserole dish. With a teaspoon, drop lumps of beaten egg white on pudding, and brown in 350f oven for 5 to 10 minutes. Chill and serve. Source: TV Guide, May 11, 1996.
