Molded beet salad

Ingredients

| 1 | tablespoon | Gelatin |
| ¼ | cup | Water; cold |
| ¾ | cup | Beets; diced |
| 1 | cup | Oranges, mandarin |
| ¼ | teaspoon | Salt |
| 3 | tablespoons | Onion; minced |
| ¼ | cup | Vinegar; or lemon juice |
| Lettuce | ||
| Mayonnaise | ||
| Celery salt | ||
Directions
Soften gelatin in cold water for 5 minutes. Drain juice from beets and oranges, ading enough water to make 1-¼ cups liquid. Heat juice to boiling and add gelatin to this; then add salt, onion, and vinegar or lemon juice (or combination of the two). Chill. when mixture is slightly thickened, fold in beets and oranges. Pour into 6 individual molds and chill until firm. Unmolk on lettuce and serve with mayonnaise with dash of celery salt.
