Melon, mango or papaya salsa with chicken cutlets

Ingredients

1Ripe mango; papaya or 1/2
; cantaloupe, peeled,
; seeded and diced
; (1/4-inch)
¼cupSliced scallion; green tops
¼cupDiced red bell pepper
¼cupFresh chopped cilantro or basil leaves
2tablespoonsFresh lime juice
1tablespoonJalapeno; chopped and seeded
; (optional)
1pinchSalt; to taste

Directions

1. In a large bowl combine all the ingredients.

2. Taste and add more lime juice and salt, as needed.

3. Serve with grilled seafood (shrimp, salmon, tuna or swordfish) or pan seared chicken cutlets.
