In a large skillet, saute onions, garlic and red bell peppers over medium heat until onions become glassy. Add chopped kale and saute or stir-fry till kale is well coated with the oil, onion, red peppers and garlic. Add ¼ cup of water only if kale appears a little dry and saute for 2-3 minutes. Season to taste with salt and peppers. Serves 4.
