|4 cups||Diced red potatoes; skin left on|
|1½||Sticks Unsalted butter|
|¼ cup||Heavy cream -; (to 1/2 cup)|
|Dried potato flakes|
|Salt and pepper; to taste|
Bring 4 cups of water to a boil, and add diced red potatoes. Boil for approximately 15 minutes, until tender. Drain. In a mixing bowl, mix potatoes and butter with a hand mixer, and gradually add the cream until the desired consistency is reached. Add more cream to thin, and add more potato flakes to thicken. Salt and pepper to taste.
