Mashed potato balls

Yield: 8 servings

Measure Ingredient
2 cups Mashed potatoes
\N \N Shortening
¼ cup Water
2 tablespoons Shortening
¼ teaspoon Salt
⅛ teaspoon Pepper
¼ cup Flour
1 \N Egg

Heat 2-3" shortening to 365'F. in a deep fryer or deep saucepan.

Combine water, 2 tablespoons shortening, salt and pepper in a medium saucepan. Bring to a boil. Stir in flour. Cook and stir until mixture forms a ball. Cool slightly, about 2 minutes. Beat in egg (dough will be very thick). Add potatoes. Mix well. Drop by rounded tablespoonfuls, a few at a time, into hot oil. Fry 3-5 minutes. Turn as needed for even browning.
