Mark janssen's green chile and spam stew

Measure Ingredient
2 cans Spam (8 oz.), rinsed and diced 1 tsp. onion powder
1 teaspoon Chili powder
2 tablespoons Vegetable oil

INGREDIENTS

Salt & pepper to taste 2 cups potatoes, diced 2 cups carrots, diced ½ cup water 1 medium onion, diced ¼ cup chopped red bell pepper 3 cloves garlic, minced 2 stalks celery, chopped 1 (4 oz.) can chopped green chile ¼ cup picante sauce 1 to 2 cups water 1 cup milk 1 tbsp. cornstarch grated cheddar cheese chopped green onion Directions: Heat the vegetables in a large cast-iron skillet. Add diced Spam, onion powder, chili powder, salt and pepper. As Spam is browning, microwave diced carrots, potatoes and i/2 cup water for 8 to 10 minutes, or until tender. While carrots and potatoes are cooking, add the bell pepper, celery, green chile and picante sauce to browned Spam, and simmer for 10 minutes. Add potatoes and carrots, and 1 to 2 cups water (enough to almost cover other ingredients).

Stir to deglaze pan, then simmer for 1 hour. Mix cornstarch and milk.

Add to Spam-vegetable mixture, and bring almost to a boil to thicken sauce. Sprinkle with grated cheddar cheese and onion, and serve with warmed flour tortillas.
