Majestic stuffed baked shad

Ingredients

| 1 | Dressed shad (3 lb) | |
| ½ | pounds | Shad or herring roe |
| ½ | pounds | Crab meat |
| Salt & pepper | ||
| 2 | tablespoons | Butter |
| 1 | medium | Thinely sliced onion |
| 4 | Strips bacon | |
Directions
Wash & dry fish thoroughly; place in shallow, foil lined baking pan.
Open fish. Mash roe; spread over bottom part of fish. Remove cartilage from crab meat; spread over roe. Sprinkle with salt & pepper; dot with butter. Close fish over stuffing; sprinkle top of fish lightly with salt & pepper. Place onion slices, then bacon strips on top of fish; loosely cover with foil. Bake in 350 oven for 45-50 minutes. (Be carefull not to overcook.) File
