Mahi mahi ceviche

Measure Ingredient
1 pounds Mahi mahi small dice about 1/4\"
½ cup Fresh lemon juice
½ cup Fresh lime juice
1 tablespoon Tabasco
2 tablespoons Kosher salt
3 \N 5x6 tomato small dice
1 \N Large yellow onion small dice
½ \N Bu fresh chopped cilantro

From the recipe books of Chef Sergio Verduzco: Mix all the ingredients allow to marinate at least 1 hr. Drain off excess juice and refrigerate. Good for 3 days maximum. Discard leftover after 3 days.
