Ceviche

Yield: 6 servings

Measure Ingredient
1 pounds Fish filets
8 ounces Lime juice
1 \N Large onion, finely chopped
1 \N Small jalapeno pepper, chopt
2 \N Med tomatoes, finely chopped
30 \N Pitted green olives
⅛ teaspoon Cumin
20 \N Capers
¼ cup Fresh coriander, chopped
¼ cup Olive oil
1 \N Salt & pepper to taste
1 \N Oregano to taste

Servings: 6

Marinate fish in lime juice for 4 to 5 hours, until fish turns white. Drain; mix with all other ingredients. Serve chilled.
