Lunghi with fresh tomato and basil sauce

Yield: 4 servings

Measure Ingredient
8 ounces Fusilli lunghi
3 tablespoons Olive oil
2 \N Cloves garlic; crushed
1½ pounds Fresh ripe tomatoes; skinned, de-seeded
\N \N ; and diced
2 tablespoons Tomato puree
1 large Pinch of cayenne pepper
\N \N Salt and freshly ground black pepper
1 teaspoon Sugar
1 pack Fresh basil

1. Cook the pasta following the instructions on the pack.

2. Meanwhile, heat the oil and add the garlic, tomatoes, tomato puree, cayenne pepper, sugar and seasoning.

3. Simmer gently, stirring occasionally for 10 minutes until the sauce has thickened slightly.

4. Tear the basil leaves into small pieces and stir into the tomato sauce with the cooked, drained pasta. Serve immediately. This recipe is also delicious with diced cooked chicken, crispy grilled bacon or a few prawns stirred into the sauce just before serving - for those who are not vegetarians! Converted by MC_Buster.
