Low-fat black beans and rice

2teaspoonsOlive oil
1cupChopped onion
½cupChopped green pepper
2cupsCooked long grain rice
½teaspoonGround cumin
teaspoonGround red pepper
teaspoonDried coriander
115-oz can black beans
¾cupChopped tomatoes

Directions

Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and tomatoes, cook 3 more minutes.
