Low-fat black beans and rice

Ingredients

| 2 | teaspoons | Olive oil |
| 1 | cup | Chopped onion |
| ½ | cup | Chopped green pepper |
| 2 | cups | Cooked long grain rice |
| ½ | teaspoon | Ground cumin |
| ⅛ | teaspoon | Ground red pepper |
| ⅛ | teaspoon | Dried coriander |
| 1 | 15-oz can black beans | |
| ¾ | cup | Chopped tomatoes |
Directions
Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and tomatoes, cook 3 more minutes.
