Lobster sausage

Ingredients

4Feet small hog casings
poundsWhitefish fillet, cubed
½teaspoonGround mustard seed
½teaspoonGround coriander
1teaspoonPaprika
1teaspoonLemon juice
½teaspoonWhite pepper
1Egg, beaten
½poundsCoarsley chopped lobster met

Directions

Prepare casings. Pulse the fish in food processor just until it is broken, 3-4 times.. Add the mustard, coriander, paprika, lemon juice, pepper and egg. Process until blended. Put the mixture in a mixing bowl and add the lobster meat; blend well. Stuff casings and twist off into 3-4" links.
