Lobster sausage

Ingredients

| 4 | Feet small hog casings | |
| 1½ | pounds | Whitefish fillet, cubed |
| ½ | teaspoon | Ground mustard seed |
| ½ | teaspoon | Ground coriander |
| 1 | teaspoon | Paprika |
| 1 | teaspoon | Lemon juice |
| ½ | teaspoon | White pepper |
| 1 | Egg, beaten | |
| ½ | pounds | Coarsley chopped lobster met |
Directions
Prepare casings. Pulse the fish in food processor just until it is broken, 3-4 times.. Add the mustard, coriander, paprika, lemon juice, pepper and egg. Process until blended. Put the mixture in a mixing bowl and add the lobster meat; blend well. Stuff casings and twist off into 3-4" links.
