Linguini with red clam sauce

Yield: 4 Servings

Measure Ingredient
1 pack (8-oz) linguini
4 tablespoons Olive oil
4 tablespoons Butter
1 small Onion; chopped
1 cup Sliced fresh mushrooms
2 \N Cloves garlic; minced
1 cup Clam juice (drained from clams)
1 can (16-oz) tomato sauce
¼ teaspoon Oregano
2 cans (6.5-oz) clams; drained
2 tablespoons Chopped fresh parsley

From: Kristen Klusmire <kristen@...> Date: Sun, 28 Jul 1996 22:27:02 -0500 Cook linguini according to package directions. In a large heavy skillet, heat oil and butter. Saute onion and mushrooms until just tender. Add garlic, clam juice, tomato sauce and oregano. Simmer for 10 minutes. Add clams and parsley just before serving. Spoon sauce over linguini. Serves 4.
