Lime broiled fish^

Ingredients

1teaspoonDijon mustard, no salt added
¼cupFresh lime juice
2teaspoonsFreshly grated gingerroot
teaspoonCayenne pepper
1teaspoonApple juice concentrate
dashPepper
4(4oz) boned fish fillets
OR
4(5 1/2-6oz) fish steaks with bone

Directions

Combine all ingredients except fish in a shallow bowl. Add fish to lime mixture; marinate at least 1 hour, turning occasionally. Preheat broiler. Place fish on broiler rack. Broil 5 minutes, basting with marinade. Turn carefully; broil 5-7 minutes longer until fish is opague. Makes 4 servings.
