1 cup | Water, hot |
1 cup | Guiness,warm(or more water) |
2 tablespoons | Margarine (soy) |
15 ounces | Raisins |
1 teaspoon | Salt |
½ teaspoon | Cloves |
1 teaspoon | Cinnamon |
½ teaspoon | Nutmeg |
3 cups | Whole wheat pastry flour |
1 teaspoon | Baking soda |
1 teaspoon | Baking powder |
Bring sugar, water, Guiness, margarine, raisins, salt and spices to a boil in a heavy saucepan, simmer for 5 minutes. Allow to cool. Stir dry ingredients together. Mix into cooled mixture. Bake in a lined (with 2 layers of wax paper) large loaf pan at 350F for 1½ hours.
