Lemon tempura dory

poundsFillets of mirror dory, john dory, redfish or sea perch
1teaspoonGrated lemon zest
¼cupLemon juice
¼cupMineral or soda water
1cupCornflour
1eachEgg white
¼cupPolyunsaturated oil

Directions

Cut fish fillets in half lengthwise. Combine lemon zest, lemon juice and soda or mineral water. Gradually blend into cornflour to form a smooth batter. Set aside for 10 minutes. Beat egg until soft peaks form. Fold into batter. Dip fillets in batter, then allow excess to drain. Shallow fry fish in hot oil for 2 minutes on each side or until flesh flakes.
