Lemon spice

Yield: 8 servings

Measure Ingredient
¼ cup Molasses
¼ cup Water -- hot
1 \N Egg white -- whipped
2 tablespoons Applesauce -- at room
\N \N Temperature
1 cup Unbleached flour
2 tablespoons Brown sugar -- packed
½ teaspoon Baking soda
½ teaspoon Ginger
½ teaspoon Cinnamon
⅛ teaspoon Salt
3 tablespoons Granulated sugar
1 tablespoon Cornstarch
1 cup Water
1 tablespoon Lemon peel -- grated
1 tablespoon Lemon juice


Preheat oven at 350. Prepare a pan(s) with cooking spray and flour.

In a mixing bowl combine molasses, water, egg white, and applesauce.

In another mixing bowl, combine flour, sugar, baking soda, ginger, cinnamon, and salt. Pour mixture into prepared pan. Bake for 30 to 35 minutes. Meanwhile, to prepare sauce, mix sugar and cornstarch in 1 quart saucepan. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in lemon peel and lemon juice.

Serve over gingerbread.
